It cannot be viable to grow 2,500 types of apple. Show me a farmer who has an orchard full of the 400th most popular apple variety and I'll show you a man who is his only customer. He is eating his own crop to survive. He is tired and malnourished. And he spends his days doing 2 things: 1) lamenting his decision to farm an unpopular apple and 2) shitting his guts out because he can only afford to eat the apples that he grows.
